This is a super easy Tomato Basil Chicken recipe.
Cook in the slow cooker and use aluminium to separate - an all in one meal that's not a casserole. It's great to have the convenience of a slow cooker, but you don't always want everything swimming in sauce.

You can add to the basic sauce any or all:
If you add zucchini or eggplant, then it's best to dice and salt these. Leave to drain for an hour or so prior to adding to the sauce. They are quite watery and might make the sauce a little thin. The passata makes a lovely thick sauce and needs no thickening.
You could substitute chopped canned tomatoes for the passata.
There really is no limit to what you add to this recipe to make it to suit your family.
You can make it for more people by using a larger slow cooker - it's perfect for family dinners.
Place your chicken fillets on the bottom of the crock pot. Pour over the passata and add the basil.
At this point, you can add chopped onion, mushroom, bell pepper or other veg of your choice.
Place aluminium foil over the chicken and sauce.
Take your baking potatoes and wrap each one separately in foil.
Wrap your prepared chopped veg in another piece of foil.
Place all three packets gently on top of the dividing foil.
Put the lid on and cook on high for around 4 hours or low for a minimum of 7 hours.
Unwrap and plate up the meal - chicken, potato, veg and sauce.
This is a superb way of cooking any meat in any type of sauce - using aluminium as separators means that you get a 'dinner' as opposed to a casserole.
It's a convenient and economical way of making a complete meal in a pot.
